sweet justice

i think the 'sho yo flesh' story shouldn't apply to everybody, but isn't it lovely when boys who have broken up with you end up dating completely lame girls several years later, and both of their waists have expanded by a factor of ten? i know, i know. it's almost mean. except that they broke up with you so it's only even. that, and you weren't the one eating all that bojangles at some winston-salem dump. dear rat, i knew you when you'd LOST your babyfat. what on earth are you doing putting it back on?

easy oriental salad

INGREDIENTS

* 1 (16 ounce) package broccoli coleslaw mix (i used just the regular coleslaw mix)
* 2 (3 ounce) packages chicken flavored ramen noodles
* 1 bunch green onions, chopped
* 1 cup unsalted peanuts
* 1/2 head read cabbage, diced
* 1/2 cup white sugar
* 1/4 cup vegetable oil
* 1/3 cup cider vinegar (if you have soy vinegar, add it.)

i also used soy sauce to taste, and a little less sugar.


DIRECTIONS

1. In a large salad bowl, combine the slaw, broken noodles and green onions.
2. Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Refrigerate until chilled; top with peanuts.

someone try this with mandarin oranges, please? dres won't touch 'em, so i haven't done it yet.

apple dapple cake

Apple Dapple Cake

3 cups all purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 beaten eggs
1 cup vegetable or canola oil
1/2 cup apple juice
2 teaspoons vanilla extract
3 cups finely chopped cooking apples (peeled)
3/4 cup chopped toasted pecans
1 cup packed brown sugar
1/4 cup butter
1/3 cup whipping cream

In a very large mixing bowl, combine flour, granulated sugar, baking soda and salt. Make a well in the center and set aside. In a medium bowl, combine eggs, oil, apple juice and vanilla extract. Stir in apples and toasted pecans. Add the egg mixture to the dry ingredients, stirring until combined. Spread batter into a greased and floured 13x9x2-inch baking pan. Bake in a 350 degree oven for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

For sauce, in a small saucepan, combine brown sugar, butter and cream. Cook and stir over medium heat just until bubbly and all of the sugar is dissolved. Cool slightly. Drizzle the warm sauce over the cake. Reheat sauce for leftover cake.

monkey bread!

Preheat oven to 350°F
1. Cut biscuits into quarters. Combine 3/4 cup white sugar with the cinnamon. Roll each biscuit quarter in the cinnamon/sugar mixture.
2. In a cake pan or baking dish (bundt pan is best), layer the biscuits and the pecans.
3. In a saucepan, slowly bring milk, remaining 3/4 cup white sugar, brown sugar, and butter to a boil. Remove from heat. Pour over biscuits in the pan. Bake for 30 minutes or until it is cooked to your liking! Flip pan over onto a serving dish and serve right away!

4 tubes Biscuits (refridgerated)
3/4 cup Granulated Sugar
3/4 cup Additional Granulated Sugar
1/3 cup Brown Sugar
1/4 cup Evaporated Milk
1 cup Butter
1.5 cups Chopped Pecans
2 tsp. Cinnamon

Although the classic monkey bread recipe calls for pecans, of course you can use chopped almonds instead! Here are a couple more ideas to give your monkey bread some originality:

Layer biscuits with apple chunks and walnuts... mmmm!

Layer biscuits with strawberry jam and fresh strawberry slices. For this variation, you would want to cut out the cinnamon and maybe replace the pecans with almonds. Of course, you can also use this same idea with other fruits… for example: apricot jam and apricot jelly or raspberry jam and mixed berries. Just remember to cut out the cinnamon! Unless you're using apple or pear jam with apples or pears! Have fun creating your own fruit combos!

Chocolate lover? Layer with chocolate chunks or chocolate chips. Just remember to cut out the cinnamon. Enjoy whatever monkey bread recipe you come up with! You can't go wrong because they are all so good!
